Sponges


Victorian Sponge Vanilla


This is my most popular cake. A beautiful soft textured sponge with enough stability to withstand decorating.

A beautiful sponge with a delicate chocolate flavour. This sponge has enough stability to withstand decorating.


Chiffon Sponge Vanilla


A gorgeous light fluffy sponge that might very well remind you of your grandparents! A very light sponge better suited to minimal frosting and light decorations.


Butter Cakes


Vanilla


This beautiful "old fashioned" recipe has a rich vanilla buttery flavour. It is much firmer than the sponge and works perfectly for the bottom layers of tall cakes.


Chocolate 


Love a nice firm cake with subtle chocolate flavours, then this one is for you.


Marble 


This is a traditional marble cake. Colour combinations are endless!

White chocolate


One of my favourites! Love a mud cake, but not the richness of the chocolate, then this one is for you.  


Caramel Mud


A little twist on the white chocolate mud cake. Perfect for caramel lovers. Teams up beautifully with a caramel mousse fill.

 Moist Rich Chocolate


The most popular chocolate cake I make! Not quite a mud cake, this superb cake is a must for chocolate lovers.


Red Velvet


Red velvet, not quite a vanilla cake, not quite a chocolate. The perfect blend of the two.


White Velvet


A beautiful white cake with a flavour not unlike an angel cake with the texture of a red velvet.


Carrot


Juicy raisins teamed up with walnuts, carrot and spices, perfect! Can be made with or without pineapple, your choice!


Slices


My signature slice is a Coconut based slice that is egg free. This can be made dairy free too by substituting the milk for coconut milk, oat milk, any milk really.

When made with coconut milk this slice is "bench stable" this means it is perfect to take to picnics, BBQs or anywhere where the slice might be sitting out of the fridge. Obviously not in extreme heat conditions!

Cookies


Butter 


Almost a shortbread, these piped cookies are spectacular! A slight almond flavour gives these little "melt in your mouth" delights a wonderful distinctive flavour. They come plain or can be decorated with chocolate. Sprinkles can be added to tie into any theme.


Chocolate chip


Who doesn't love a chocolate chip cookie!


These treasures come in:

  • white, milk or dark chocolate (or a mix of all 3)
  • Chocolate and Cranberry (Your choice of chocolate) 
  • M&M - For a wonderful colourful tasty cookie


ANZAC


These traditional bickies are on offer all year round.

They can be made either crispy or chewy, you decide!


Frostings

I only work with buttercreams and ganache to cover your cakes. I have a range to suit!


Buttercreams


These can be used to cover and fill all cakes.


American Buttercream


This is one to withstand the elements. One of the only buttercreams to set with a "crust". Wonderfully sweet with the ability to flavour and colour to your liking.


Italian Meringue Buttercream


This has to be one of the smoothest buttercreams out there. Excellent for decorative piping. Not as sweet as the American buttercream with the ability to flavour and colour to your liking.


Swiss Meringue Buttercream


The only difference between the Swiss and the Italian meringue buttercreams (apart from how they are made) is the stability. Swiss meringue is slightly softer than Italian meringue.


Russian Buttercream


This is one of the softest buttercreams there is. Not too spectacular at holding intricate piping designs but has a beautiful smooth texture and flavour. This buttercream comes in chocolate, vanilla, caramel and Nutella. I tend to reserve this one for the cooler months!


Ganache


This can be used to cover and fill


This is the one to withstand the elements! Ganache can stand up to higher temperatures than buttercream, perfect if your function is outside. Can be made in milk, dark or white chocolate.


  • White Chocolate Ganache is the only ganache that can be coloured to any colour.
  • Milk chocolate can be coloured dark hues of reds.
  • Dark chocolate can be coloured black.


Fillings




If you are looking to up the flavour of your cake you can choose to add a fill.


Mousse


Mousse fill is perfect in most cakes, can hold its shape in basic piping, and comes in:

  • Chocolate
  • Strawberry
  • Caramel
  • Vanilla - Most popular!
  • Vanilla Chai
  • Biscoff


Cream Cheese


Don't forget cream cheese frosting! Perfect for fill, but not so good for holding up in piping.


Others


Maybe you are more of a strawberry jam lover or enjoy a good lemon curd... there are many possibilities!
